- Soak pitted dates in hot water for 10-15 mins. Once soft, squeeze excess water from the dates and blend with walnuts in a food processor or high power blender. Scoop 1½ tablespoons at a time into muffin tins greased or lined with muffin papers.
- Wipe out blender and add remaining ingredients. Blend thoroughly until consistency is creamy and smooth. Pour into muffin tins, filling each to the top.
- Cover with plastic wrap and freeze for 4-6 hours until hard. Let thaw slightly before serving.
