Instructions

  1. Soak pitted dates in hot water for 10-15 mins. Once soft, squeeze excess water from the dates and blend with walnuts in a food processor or high power blender. Scoop 1½ tablespoons at a time into muffin tins greased or lined with muffin papers.
  2. Wipe out blender and add remaining ingredients. Blend thoroughly until consistency is creamy and smooth. Pour into muffin tins, filling each to the top.
  3. Cover with plastic wrap and freeze for 4-6 hours until hard. Let thaw slightly before serving.
