Raspberry Mango Coco Pops

- 1 1/2 cup Pacific Foods Organic Coconut Original Plant-Based Beverage divided
- 1 cup frozen mango
- 1 cup frozen raspberries
- 3/4 cup dairy-free coconut yogurt
Instructions
- Add ½ cup Organic Coconut Original Plant-Based Beverage and mango to a high-speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of mango mixture into the base of 8 popsicle molds (this is the top layer). Place in the freezer to briefly set (for 5-10 minutes) while you prepare the next layer.
- Add ½ cup Organic Coconut Original Plant-Based Beverage and coconut yogurt to a high-speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of coconut mixture into the 8 popsicle molds (this is the middle layer). Place in the freezer to briefly set (for 5-10 minutes) while you prepare the next layer.
- Add ½ cup Organic Coconut Original Plant-Based Beverage and raspberries to a high-speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of raspberry mixture into the 8 popsicle molds (this is the bottom layer).
- Add popsicle sticks to molds. Place in the freezer to fully set, about 6 hours.
- Remove popsicles from molds and enjoy!
