Ingredients

  • 1 1/2 cups Pacific Foods™ Organic Coconut Original Plant-Based Beverage, divided
  • 1 cup frozen mango chunks
  • 1 cup frozen unsweetened raspberries
  • 3/4 cup dairy-free dairy-free plain coconut milk yogurt

Instructions

  • Step 1

    Add 1/2 cup coconut milk and mango to a high speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of mango mixture into the base of 8 popsicle molds (this is the top layer). Place in the freezer to briefly set (for 5-10 minutes) while you prepare the next layer. 

  • Step 2

    Add 1/2 cup coconut milk and coconut yogurt to a high speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of coconut mixture into the 8 popsicle molds (this is the middle layer). Place in the freezer to briefly set (for 5-10 minutes) while you prepare the next layer. 

  • Step 3

    Add 1/2 cup coconut milk and raspberries to a high speed blender. Blend on high until smooth and creamy. Pour 1-2 tablespoons of raspberry mixture into the 8 popsicle molds (this is the bottom layer). Add popsicle sticks to molds. Place in the freezer to fully set, about 6 hours. Remove popsicles from molds and enjoy!
