Dairy-Free Berry Cobbler

  • 3 1/2 cups mixed berries (blueberries, raspberries, strawberries)
  • 3 tablespoons coconut sugar, divided
  • 2 1/2 tablespoons lemon juice (from about 1 lemon)
  • 1/2 tablespoon grated lemon zest (from about 1/2 lemon)
  • 1/2 cup unbleached pastry flour
  • 1/4 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut oil
  • 1 egg
  • 3 tablespoons Pacific Foods™ Organic Oat Original Plant-Based Beverage
  • 2 tablespoons turbinado sugar for sprinkling on top


  • Step 1

    Preheat oven to 425°F. and grease a baking dish with coconut oil. Add berries to a large bowl. Sprinkle with 1 tablespoon coconut sugar, lemon juice, and lemon zest. Stir to coat and let sit for 10 minutes. 

  • Step 2

    Prepare cobbler topping: In a large bowl stir together flour, oats, baking powder, sea salt, and 2 tablespoons coconut sugar. In a separate small bowl whisk together coconut oil, egg, and oat plant based beverage. Pour wet mixture into dry mixture and stir to combine. 

  • Step 3

    Pour berries into greased baking dish. Dollop a small amount of cobbler mixture randomly on berries. Repeat with the remainder of the cobbler batter and sprinkle with turbinado sugar. 

  • Step 4

    Bake cobbler for 25-32 minutes, or until cobbler is golden. Remove from oven and let sit 10 minutes before serving. Enjoy!
