Dairy-Free Blueberry Cashew Smoothie Bowl

Recipe Ingredients:
  • 1 cup Pacific Foods Cashew Unsweetened Original Plant-Based Beverage
  • 1 cup sliced frozen zucchini
  • 1/2 cup frozen blueberries
  • 1 Tbsp. chia seeds
  • 2 Tbsp. raw cashews
  • 2 Tbsp. fresh blackberries or blueberries
  • 1/4 cup unsweetened coconut flakes
  • 1 Tbsp. cashew butter
  • Add Cashew Plant-Based Beverage, frozen zucchini, and frozen blueberries to a high-speed blender. Blend on high until thick and creamy, pausing to scrape down sides of blender. If the mixture is too thick, add in another splash of Cashew Plant-Based Beverage.
  • Pour smoothie into a bowl and garnish with chia seeds, cashews, blueberries or blackberries, coconut flakes, and a drizzle of cashew butter. Enjoy!
