Ingredients

  • 4 eggs
  • 6 ounces uncooked ramen noodles
  • 1 carton (32 ounces) Pacific Foods® Organic Chicken Miso Ramen Broth (amount divided in recipe steps below)
  • 12 ounces cooked boneless, skinless chicken breast, thinly sliced
  • 1 cup fresh or frozen edamame (thawed if frozen)
  • 1 cup fresh or frozen whole kernel corn (thawed if frozen) (optional)
  • 1/2 cup sliced green onion (scallion)
  • 2 radish, sliced

Instructions

  • Step 1

    To prepare jammy eggs, heat water in a saucepan to a boil. Gently add the eggs and cook for 7 minutes. While the eggs are cooking, prepare a bowl of ice water. Remove the eggs and place immediately into the ice water to chill and set. Peel and cut in half, then set aside.

  • Step 2

    Cook ramen noodles according to package directions and then divide them among 4 bowls.

  • Step 3

    Heat ramen broth in a saucepan, then divide the broth among the 4 bowls with the noodles (1 cup per bowl). Top with eggs, chicken, corn, green onion and radish.
