This recipe includes pan seared chicken and fresh vegetables in a delicious creamy pan sauce created by the combination of pairing Pacific Foods® Organic Chicken Broth and Organic Cream of Mushroom Condensed Soup.
Season chicken with salt and pepper.
In a large sauté pan over medium heat, add olive oil and sear chicken on all sides until brown. Remove chicken and set aside.
Add butter, celery, carrot, mushrooms, onion, and garlic. Sauté until softened.
Stir in white wine and reduce by half.
Add in Pacific Foods Organic Chicken Broth, Pacific Foods Cream of Mushroom Soup, thyme, and bay leaf. Bring to a simmer.
Add chicken back to the pan. Simmer until internal temperature of the chicken reaches 165°F, about 20-25 minutes.
