In a saucepan over medium heat, whisk together oat milk, pumpkin puree, maple syrup, vanilla extract and pumpkin pie spice. Heat 3 to 6 minutes whisking constantly until it starts to simmer.
Pour the pumpkin mixture into a blender and blend until frothy, about 30 seconds. Stir into the brewed coffee and serve immediately.
