Ingredients

  • 1 pound Italian pork sausage
  • 1 cup diced yellow onion (about 1 medium onion)
  • 1 cup diced large carrot (about 2 carrots)
  • 2 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon crushed red pepper (optional)
  • 4 cups Pacific Foods® Organic Free Range Chicken Broth
  • 1 cup heavy cream
  • 9 ounces fresh cheese tortellini
  • 4 cups kale, chopped

Instructions

  • Step 1

    Warm a large stockpot over medium heat. Add the sausage, and cook until browned, stirring occasionally. Transfer the cooked sausage to a paper towel lined plate. Set aside. Add to the pot onion, carrot, and a pinch of sea salt. Saute 5 minutes, or until tender. 

  • Step 2

    Add the tomato paste and cook for 2 minutes or until fragrant and fully mixed into the vegetable. Add the garlic, Italian seasoning, thyme leaves, and red pepper flakes (if using) and saute 1 minute, or until fragrant. Slowly stream in the broth and heavy cream. Whisk to combine. Cook until the mixture starts to bubble, then reduce heat to low and simmer for 5 minutes. 

  • Step 3

    Add the sausage back to the pot along with the tortellini and kale. Simmer for 5 minutes or until the tortellini is tender. Serve immediately with freshly grated Parmesan, chopped parsley, warm bread, or any other desired toppings.

  • Tips

    • For a spicy soup, use hot Italian sausage in place of regular Italian sausage and add 1 teaspoon of crushed red pepper flakes during Step 2.

    • This hearty soup is best served immediately after cooking. If you have any leftovers, you may want to add additional broth when reheating.
