- 3 tablespoons vegetable oil (amount divided in recipe steps below)
- 1 small head (2 1/2-3 pounds) green cabbage, cut into 6 wedges leaving the core intact
- 2 cups Pacific Foods® Organic Chicken Miso Ramen Broth
- 1/4 cup tahini paste
- 2 tablespoons fresh lemon juice
- 1 tablespoon pure maple syrup
- 1 green onion, sliced (about 2 tablespoons)

Instructions

Step 1
Heat oven to 425°F. Heat 1 1/2 tablespoons oil in a 12-inch skillet over medium-high heat. Add cabbage wedges, cut side down and cook for 4 minutes, pressing down to increase contact with the skillet surface, until lightly charred (see Tips about cabbage). With tongs, flip to the other cut side. Add remaining 1 1/2 tablespoons oil and continue to cook for 4 minutes until charred. Season with salt and pepper.

Step 2
Add 2 cups of Pacific Foods® Organic Chicken Miso Ramen Broth and bring to a boil. Transfer to the oven and cook for 20-25 minutes or until the cabbage is tender.

Stir together tahini, lemon juice, and maple syrup. Season with salt and pepper to taste. Thin the dressing with an additional 1 tablespoon of Pacific Foods® Organic Chicken Miso Ramen Broth if desired. Serve drizzled over cabbage with sliced scallions to garnish.

Tips

Cabbage size is key, if your cabbage is large, you may need to trim the wedges to fit in the skillet, and/or use only a portion of the head. It's important to make sure you get a good sear on the cabbage so it needs to touch the surface of the pan. It is a good idea to check the weight of your head of cabbage. We recommend using a 2 1/2 to 3 pound cabbage head. If you have the weight of cabbage and are still having difficulty fitting it in the skillet, you can also sear it in 2 batches. After it has been seared, you can then fit all of the wedges back into the skillet.
