Preheat the oven to 350°F. Heat oil in a large skillet, add chopped garlic and kale. Saute kale for 3 minutes, until slightly limp.
In a medium mixing bowl, whisk eggs, coconut milk, cheese, salt and pepper until blended.
Grease the bottom and sides of a 1 1/2-qt. baking dish, and fill with the bread, kale and tomatoes, spread evenly throughout. Pour egg mixture into the dish. Bake for 40 to 50 min. until the top is starting to turn golden brown.
