- 3 1/4 cups Pacific Foods® Organic Pork Tonkotsu Ramen Broth, divided
- 1 1/2 cups uncooked long grain white rice
- 4 thick cut hickory smoked bacon, chopped (about 6 ounces)
- 1 cup kimchi, drained well by pressing kimchi with a spatula in a strainer to remove and reserve 1/4 cup kimchi liquid*, chopped (see Tips section if you do not have enough kimchi liquid)
- 5 green onion, white parts finely chopped (1/4 cup) and green parts sliced on a bias (1/2 cup), divided
- 2 tablespoons gochujang, divided
- 1/3 cup mayonnaise
- 6 fried eggs

Step 1
Bring 3 cups Pacific Foods® Organic Pork Tonkotsu Ramen Broth to a boil in a saucepan over high heat. Add rice and return to a boil. Reduce heat and simmer covered for 20 minutes until rice is tender and Pacific Foods® Organic Pork Tonkotsu Ramen Broth is absorbed. Spread on rimmed baking sheet and place in in the freezer for 20 minutes or until completely cooled. Combine mayonnaise and 1 tablespoon gochujang. Thin, if desired, to drizzling consistency with 1 teaspoon of broth.

Meanwhile, cook bacon in a 12-inch nonstick skillet over medium heat until bacon is crisp. Remove bacon (reserve 1 tablespoon bacon drippings) and drain on a paper towel-lined plate; set aside. Add reserved 1 tablespoon of bacon drippings to the skillet over medium heat. Add kimchi and white parts of scallions, stirring frequently, until heated through. Add rice and cook, stirring, until combined. Add kimchi liquid PLUS enough extra Pacific Foods® Organic Pork Tonkotsu Ramen Broth to make 1/2 cup total. Stir in 1 tablespoon gochujang and cook, stirring until well combined. Stir in half the bacon and half of the green parts of the scallions.

Serve topped with fried eggs and reserved bacon. Drizzle with gochujang mayonnaise and remaining green parts of scallions.

Tips

Need more kimchi juice? Very young kimchi will have less kimchi juice. Older kimchi with have more juices available. You will need 1/2 cup of liquid total, so get as much juice from the kimchi as possible and make up the difference with Pacific Foods® Organic Pork Tonkotsu Ramen Broth.

For fried eggs: Heat 1 tablespoon sesame oil in a large nonstick skillet over medium-low heat. Crack eggs, two at a time into the skillet. Once edges of the eggs are set, tilt the pan, allowing oil to pool at the edge and spoon over the whites to set them and cook to desired doneness. Loosen eggs with a spatula then top rice with eggs and garnish. Repeat this method by adding an additional 1 tablespoon sesame oil to the skillet and fry the remaining 4 eggs.
