2024 is the year of soup — at least, according to The New York Times. And we agree.

Nothing says warmth and nourishment like a bowl of soup. Below, we’ve curated a range of hearty and irresistible recipes.

From a Vietnamese and keto-friendly twist on chicken noodle soup to vegan soups filled with roasted veggies, these nourishing recipes will satisfy your hunger and warm your body.

1. Black Bean, Sweet Potato and Kale Soup

This recipe has everything you need to satisfy cravings and bring true warmth during the coldest time of year.

  • Vegetables? Check. In addition to sweet potato and leafy kale, you’ll use onion and red bell pepper. If you like avocado, add slices.
  • Grains and legumes? Check. Black beans are the heart of the dish, but there’s also farro for added texture.
  • Hearty broth? Of course! With aromatics like garlic, cumin and cayenne, plus Pacific Foods Organic Chicken Bone Broth, the base of the soup is deep and flavorful — perfect for warming you from the inside out.

With “cozy” right in the name, you know this soup will envelop you in comfort on a cold or snowy day. To get started, roast your pans of squash halves and diced squash and onions to bring out the nutty, sweet flavors of the squash.  Don’t forget to top with oil, sage and salt and pepper before popping them into the oven.

3. Roasted Vegetable Soup With Cabbage

This soup is chock-full of vegetables. Plus, it’s hearty and makes for a bright, lovely dish to counteract the darkest days of winter.

Roast the sweet potatoes and fennel together, then sauté with onions and cabbage. This enhances the flavors and creates a crispness that adds texture. Combine all the vegetables with Pacific Foods Low Sodium Organic Vegetable Broth, a bay leaf and thyme. Then just simmer and serve.

4. Keto Vietnamese Chicken Noodle Soup

Is there anything better than cozying up on the couch with blankets and a steaming, flavorful bowl of chicken noodle soup on a cold day?

Start by frying the shallot and garlic until they are crispy. Keep a close eye, they can go from browned to burned quickly.

Once your shallot and garlic are fried, you’ll cook the rest of your aromatics. Start with coriander and star anise, followed by the lemongrass, ginger and pepper. Next comes the broth. Pacific Foods Organic Unsalted Chicken Bone Broth is so savory and flavorful that you can sip it by the cup. Here, it adds even more depth and complexity to the spice-infused soup.

Cook the chicken in the broth then remove and shred. Portion out your cooked noodles and chicken into soup bowls and top with broth, fresh herbs and bean sprouts. It’s so flavorful and enticing that you’ll add it to your regular rotation year-round.

Pho is a dish known for its delicious herbal broths. In this recipe, spiralized zucchini noodles take the stage in place of rice noodles to create an earthy and comforting vegetable-forward dish.

Start with a base of hoisin sauce, lemongrass, garlic and ginger. Mix this with fragrant Pacific Foods Organic Mushroom Broth and lime juice. Next, add mushroom, peppers and zucchini noodles into the broth and let it simmer.

7. Wild Rice Mushroom Soup

Do you know the term “mirepoix” (pronounced “meer-pwah”)? It’s just diced carrots, celery and onion. This simple trio is so common as a cooking base it has its own name. And when you taste these last three nourishing soup recipes, you’ll understand why.

For this wild rice and mushroom soup, start with a sauté of mirepoix plus mushrooms. Add herbs, then whisk in the cream of mushroom soup, mushroom broth and cooked rice. For the best flavor, use Pacific Foods Organic Cream of Mushroom Soup, a tasty condensed soup made of mushrooms with garlic and cream.

Once the soup is thick and warm, serve it up in your favorite bowl.

8. Remarkable Rosemary Turkey Noodle Soup

If you have leftover turkey, put it to use by mixing it with rosemary, thyme, and broth for a simple soup that’ll remind you of home.

Sauté mirepoix, then add turkey, spices, chicken broth and fresh rosemary. Cook until vegetables are tender, then serve over cooked noodles.

The key to this dish is your noodle choice. With just salt, pepper, thyme and rosemary for spices, the broth adds the depth and savoriness that makes this soup truly remarkable. Choose a noodle that will hold onto the flavorful broth, such as rotini, cavatappi, or conchiglie.

9. Gluten-Free Minestrone Soup

This gluten-free take on an Italian classic is as simple as it is delicious.

Begin by boiling gluten-free elbow macaroni. While it’s cooking, sautee carrots, celery, onion, and garlic until the vegetables are tender-crisp. Add crushed red pepper, tomato paste and tomato paste to the mix.

Add in broth, kidney beans, and green beans and bring to a boil. Simmer until the vegetables are tender, stir in the macaroni and voila.

We like sprinkling some parmesan to finish to finish this recipe off but it’s entirely up to you.
