Indian Dal

Recipe Ingredients:
  • 2 tbsp ghee or coconut oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots peeled and diced
  • 1 tsp cumin
  • 1 tsp ground ginger
  • 1 ½ tsp turmeric
  • ¼ tsp cardamon
  • ¼ tsp sea salt
  • 2 cups red lentils
  • 2 cups Pacific Foods Organic Creamy Moroccan Sweet Potato Soup
  • 2 cups Pacific Foods Organic Vegetable Broth

To serve:

  • ¼ cup fresh cilantro chopped
  • 4-6 pieces fresh nan
  • cup plain yogurt
  • Add ghee or coconut oil to a large pot over medium heat. Add onion, garlic, and carrots and saute until slightly tender, about 7 minutes.
  • Add cumin, ginger, turmeric, and cardamom and cook for 1-2 minutes, stirring often, until fragrant.
  • Add sea salt, red lentils, creamy soup, and vegetable broth. Bring dal to a boil, cover, reduce heat to a low simmer and cook for 15-20 minutes, stirring occasionally, or until lentils are softened. If the mixture becomes too thick, add in another ¼-½ cup vegetable broth.
  • Serve dal with cilantro, nan, and a spoonful of yogurt, if desired. Enjoy!
