Mediterranean Bowls with Roasted Red Pepper Tomato Sauce

  • 2 tablespoons Pacific Foods™ Organic Creamy Roasted Red Pepper & Tomato Soup
  • 2 tablespoons tapenade
  • 2 tablespoons crumbled feta cheese
  • 1/2 cup uncooked quinoa, rinsed
  • 1 cup chopped fresh spinach
  • 1 cucumber, chopped
  • 1/4 cup finely chopped red onion
  • 1 dollop hummus or tzatziki
  • as needed fresh parsley, chopped
  • as needed olive oil to taste
  • as needed lemon juice to taste
  • as needed salt and pepper to taste


  • Step 1

    Cook quinoa according to package directions. While the quinoa is cooking, mix soup, tapenade, and feta cheese in a saucepan until hot. 

  • Step 2

    Add cooked quinoa, spinach, cucumber, onion, parsley, hummus and/or tzatziki to a bowl and top with soup mixture. Season with salt and pepper, lemon juice, and a drizzle of olive oil to taste.
