In a large pot or Dutch oven, heat avocado oil until shimmering. Add onion and saute until browned. Add garlic and saute until fragrant, about 1 minute.
Add 2 teaspoons adobo sauce, paprika, cumin, and salt and pepper to taste. If you would like to add 1 to 2 chipotle peppers for extra spice, you can do so as well. Heat until fragrant.
Add sweet potatoes to the pot. Pour in broth. Simmer on low for 30 minutes or until sweet potatoes are soft. Blend with stick blender in the pot or carefully transfer to a blender and blend until smooth. Serve and enjoy!
