Add olive oil to a large pot over medium heat. Stir in onion and saute for 5 minutes. Stir in garlic and mushrooms and saute for 4 minutes. Sprinkle with thyme, sea salt, pepper, red pepper flakes, and paprika.
Add broth, soup and heavy cream. Bring to a boil, reduce heat, and let simmer for 10 minutes, or until sauce slightly thickens. Add in tortellini. Cook 7 minutes, or according to package directions. When pasta has 1 minute remaining, stir in spinach and Parmesan cheese. Serve pasta and enjoy!
