Thanksgiving Leftovers Curry

Forget the sandwich, turn your Thanksgiving leftovers into a hearty curry instead! It can be done in about 30 minutes, and you can dump in any leftover roasted vegetables in with your leftover turkey.  Recipe created by Zachary Neman.

Ingredients

  • 3 tablespoons vegetable oil
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon curry powder
  • 2 1/2 cups Pacific Foods® Organic Zesty Ginger and Turmeric Creamy Plant-Based Broth
  • 4 cups leftover cooked turkey breast
  • 2 cups leftover roasted vegetables or cooked mixed vegetables

Instructions

  • Step 1

    Heat the oil in a large pot over medium-high heat.  Add the onion and cook until translucent.  Add the garlic and a pinch of salt and cook and stir for 1 minute.  Cook until the onion and garlic begin to turn golden.

  • Step 2

    Add the tomato paste and cook and stir for 2 minutes.  Add the cayenne pepper, paprika and curry powder and cook for stir for 30 seconds.  Add the broth and heat to a boil, stirring to scrape up any browned bits from the bottom of the pot.

  • Step 3

    Stir in the turkey and leftover vegetables  Reduce the heat.  Simmer for 10 minutes.  Season to taste with salt.  Serve over hot cooked jasmine or basmati rice and sprinkle with fresh cilantro leaves.
