Ingredients

  • 1/2 pound uncooked shrimp, peeled, deveined and tails removed
  • 1 cup Pacific Foods™ Organic Free Range Chicken Broth
  • 1 teaspoon chili powder (optional)
  • 1 cup plain yogurt or sub dairy-free yogurt
  • 1/2 lemon, juiced
  • 2 tablespoons olive oil
  • 1 large zucchini, spiralized into zoodles
  • 1 cup whole kernel corn
  • 1 cup grape tomatoes, cut in half
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon fresh basil leaves, chopped

Instructions

  • Step 1

    In a medium skillet, cook shrimp with broth and chili powder (if using) for 5 to 7 minutes or until cooked through.

  • Step 2

    Stir the yogurt, lemon juice and olive oil in a small bowl.

  • Step 3

    Assemble the bowls with the zoodles, corn, tomatoes, shrimp, and feta cheese.  Toss with the yogurt dressing and garnish with the basil.  Season to taste with salt and pepper.
