Hawaiian Grilled Huli Huli Chicken and Rice

Ingredients

  • 4 pounds chicken drumstick
  • 1 cup pineapple juice
  • 2 teaspoons salt
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup Pacific Foods™ Organic Free Range Chicken Broth
  • 2 tablespoons ginger root, minced
  • 1 1/2 teaspoons garlic, minced
  • 1/4 cup green onion, sliced
  • 1 teaspoon orange zest
  • 2 cups Pacific Foods™ Organic Free Range Chicken Broth (for rice)

Instructions

  • *set some of the marinade sauce aside before adding raw chicken for glazing* Combine ginger, minced garlic, green onion, and orange zest in a zip lock bag. Marinate for a minimum of 2 hours and a maximum of overnight. Rice Combine rice and Pacific Foods Chicken Broth and bring to a boil in a medium sauce pot with a lid. As soon as the mixture is boiling, lower the heat to a slow simmer for 5 minutes, then turn heat off and leave the lid on for another 15 minutes. Fluff rice with a fork. Remove the chicken from the marinade, and grill until the internal temperature reaches 165. Serve over top of rice, and top with remaining sauce mixture if necessary.
