Chocolate Mini Cakes with Hazelnut Cream

Ingredients

  • 2 tablespoons cocoa powder
  • 8 tablespoons all purpose flour
  • 1/4 teaspoon baking powder
  • 2 tablespoons melted coconut oil
  • 2 tablespoons Pacific Foods® Organic Almond Original Plant-Based Beverage
  • 1/4 cup honey or coconut sugar
  • 2 tablespoons melted semi-sweet chocolate chips
  • 1 pinch sea salt
  • 2 tablespoons hazelnut chocolate spread (like Nutella- sometimes called hazelnut cream)
  • 1 tablespoon chopped hazelnuts (filberts)

Instructions

  • Combine flour, cocoa powder, baking powder, and salt into a medium sized mixing bowl. Then add: Organic Almond Nondairy Beverage, coconut oil, egg, honey, and melted chocolate chips. Divide batter into three mugs and microwave separately for 1 minute each (or alternatively, bake at 350¡ã Fahrenheit for 12-15 minutes). Top with hazelnut cream and hazelnuts.
