Combine flour, sugar, baking powder, and salt in a large mixing bowl.
In a separate small bowl, combine hemp milk, egg, melted coconut oil, lemon juice and vanilla; add to flour mixture and stir until batter is smooth.
Pour 1/4 cup of batter at a time onto a preheated and greased frying pan or griddle. Carefully flip when dough is bubbly, about 3 to 4 minutes on each side. Repeat with remainder of batter.
