  • 4 cups Pacific Foods™ Organic Coconut Unsweetened Plant-Based Beverage
  • 1 cup fresh blueberries, divided
  • 1 whole banana, mashed


  • Step 1

    In a sauce pan, bring 2 cups coconut milk, 3/4 cup blueberries, and the mashed banana to a boil. Reduce to a simmer until blueberries begin to soften, stirring with a wooden spoon frequently to break down the blueberries. Do this until the mixture is a deep purple. Remove from the heat and let cool.

  • Step 2

    In a popsicle mold, fill halfway with the simmered banana blueberry coconut blend. Fill remaining half with remaining coconut milk and blueberries. Let freeze overnight. Enjoy!
