Baked Coconut and Blueberry Oatmeal

Recipe Ingredients:
  • 1 cup unsweetened shredded coconut
  • 2 cups old fashioned rolled oats
  • 2/3 cup slivered almonds
  • 1/3 cup dried blueberries or cranberries
  • 1/4 cup sugar (or sub coconut sugar)
  • 1/4 tsp. salt
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 3/4 cup Pacific Foods Organic Oat Original Plant-Based Beverage
  • 1/4 cup coconut oil melted
  • 1 cup fresh blueberries for serving
  • 1 cup coconut yogurt
  • Preheat oven to 350F.
  • Sprinkle shredded coconut onto baking sheet and bake until just slightly golden brown - about 2-4 minutes. Watch carefully as to not burn!
  • In a large mixing bowl, combine oats, almonds, and the toasted coconut, dried fruit, sugar, and salt.
  • In a separate medium bowl, whisk together maple syrup, Organic Oat Original Non-Dairy Beverage, eggs, and melted coconut oil.
  • Add wet ingredients to the dry mixture.
  • Pour oatmeal into greased baking dish and bake for 35-45 minutes, or until slightly golden brown.
  • Serve immediately with fresh blueberries and coconut yogurt.
