Preheat waffle iron and spray with nonstick cooking spray. In a small bowl whisk together olive oil, broth, and eggs.
In a separate bowl whisk together flour, baking powder, baking soda, and sea salt.
Add mashed potatoes and cheddar cheese to egg and broth mixture. Stir well to combine. Add in dry mixture and stir well to combine.
Scoop 1/3 to 1/2 cup batter into waffle iron. Close lid and let waffle bake until golden brown. Remove waffle from iron and repeat with remainder of batter.
Serve waffles and enjoy!
Note: if you don't have a waffle iron, scoop batter onto a hot griddle, cook five minutes, flip, cook an additional 5 minutes and enjoy potato pancakes instead!
