Quick and Easy Egg Drop Soup

  • 6 green onions
  • 1 carton Pacific Foods Organic Chicken Stock
  • 2 tbsp soy sauce
  • 4 tsp minced fresh ginger
  • 4 eggs beaten
  • 2 tsp sesame oil
  • 1 tsp pepper
  • 4 eggs beaten
  • 2 tsp sesame oil
  • 1 tsp pepper
Instructions
  • Slice white part of green onions; set aside. Slice green part of green onions; set aside.
  • In saucepan, bring Pacific Foods Organic Chicken Stock to boil; reduce heat to medium-low. Stir in sliced white part of green onions, soy sauce and ginger. Simmer for 15 minutes.
  • Whisk together eggs. While stock is simmering, stir soup, adding beaten eggs in slow and steady stream; cook, without stirring, for 1 to 2 minutes or until strands of eggs are just cooked.
  • Stir in sesame oil and pepper. Garnish with green part of green onions.

Notes

Add shredded chicken to soup if desired.
