Vegan, Gluten-Free Very Berry Mini Muffins

  • 1 1/2 cups gluten free baking flour
  • 3/4 cup packed vegan brown sugar or coconut sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1/3 cup melted coconut oil
  • 1 ripe banana, mashed
  • 1/2 cup Pacific Foods™ Organic Oat Original Plant-Based Beverage
  • 1 cup mixed berries (blueberries, raspberries, strawberries), fresh or frozen


  • Step 1

    Preheat oven to 400°F. and line or grease a 24-cup mini muffin tin. 

  • Step 2

    In a large bowl whisk together dry ingredients: flour, sugar, baking powder, sea salt, and cinnamon. Add in melted coconut oil, mashed banana, and oat plant based beverage. Fold in berries. Divide the batter between the 24 muffin cups. 

  • Step 3

    Bake mini muffins for 20 to 22 minutes, or until toothpick inserted into the center comes out clean. Remove muffins from oven and let sit in tin for 5 minutes to cool. Gently remove muffins from muffin tin and let cool on a baking rack.
