Ingredients

  • 1/3 cup Pacific Foods™ Organic Oat Original Plant-Based Beverage (3 ounces), divided
  • 2 tablespoons coffee beans
  • 1 tablespoon coconut sugar
  • 1 tablespoon cacao nibs
  • 2 cups ice cubes
  • 1/2 cup espresso (2 double shots), chilled
  • 1/4 cup hazelnut liqueur (about 2 ounces)
  • 1/4 cup vodka (2 ounces)

Instructions

  • Step 1

    Spoon 2 tablespoons oat milk onto a small dish.  Reserve 6 coffee beans.

  • Step 2

    Add the remaining coffee beans, the coconut sugar and cacao nibs to a coffee grinder.  Grind finely.  Transfer the mixture to another small dish.  Dip the rims of 2 martini or coupe glasses into the oat milk (hold upside down to allow excess to drip off), then into the coffee bean mixture to coat.  Set the glasses aside.

  • Step 3

    Fill a cocktail shaker with ice.  Add the espresso, hazelnut liqueur, vodka and remaining oat milk to the shaker.  Cover and shake to combine.  Strain the mixture into the glasses and add the reserved coffee beans.  Sprinkle with some of the remaining coffee bean mixture before serving.
