  • 2 1/3 cups all purpose flour, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 4 teaspoons ground cinnamon, divided
  • 3 eggs
  • 1/2 cup vegetable oil
  • 5 1/2 tablespoons Pacific Foods® Original Organic Almond Milk, Plant-Based Milk, divided
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apple
  • 1/2 cup brown sugar
  • 2 tablespoons coconut oil, melted
  • 1 cup confectioners' sugar

Instructions

  • Step 1

    Preheat oven to 375°F.  Whisk together 2 cups flour, baking powder, baking soda, salt, sugar and 3 teaspoons cinnamon in a large mixing bowl. Mix in eggs, vegetable oil, 4 tablespoons almond milk and vanilla and combine thoroughly. Fold in apple pieces. Scoop mixture into lined muffin pan filling each tin only 2/3 full. 

  • Step 2

    In a small bowl mix together brown sugar, 1/3 cup flour, 1 teaspoon cinnamon and coconut oil and crumble on top of muffins. Bake for 18-20 minutes until tops are golden brown. 

  • Step 3

    To make icing, in another small bowl whisk together confectioners' sugar and 1 1/2 tablespoons almond milk, drizzle on muffins once they have cooled slightly.
