Lemon Tahini Dressing on a Kale Salad

  • 5-6 cups green and purple kale chopped roughly
  • 1 large carrot cut into 1" pieces
  • 1 avocado sliced
  • 1/4 cup mint leaves
  • 1/2 cup purple cabbage shredded
  • 1 lemon
  • 1/2 tsp. salt
  • 1 tsp. sesame seeds
  • optional edible flowers



  • In a small mixing bowl, add all dressing ingredients and whisk with a fork until smooth.
  • In a large mixing bowl, add kale, the juice of ½ of a lemon and salt and massage the juice into the kale for 2 minutes.
  • Add carrots, cabbage, avocado and mint. Toss with the dressing, garnish with sesame seeds, edible flowers, and slices from the remaining lemon.
