Fish Puttanesca en Papillote

Ingredients
Recipe Ingredients:
  • 1 pound white fish such as tilapia, cod, or sea bass
  • 2 cloves garlic minced
  • 1 1/2 cups Pacific Foods Organic Hearty Tomato Bisque Soup
  • 1/2 cup pitted olives
  • 1/3 cup capers
  • 1/3 cup jarred roasted red peppers
  • 4 sprigs thyme
  • 1/2 lemon sliced
  • add sea salt and pepper to taste
Instructions
  • Preheat oven to 375 degrees Fahrenheit.
  • On a large baking sheet, place pieces of fish on 12-inch square pieces of parchment. Fold in two opposite edges of the parchment, then roll in the remaining two edges and tuck under fish.
  • Evenly distribute the seasonings on each piece of fish, Organic Hearty Tomato Bisque Soup, olives, capers, roasted red peppers, thyme, salt, pepper and one lemon slice.
  • Bake in the oven for 20-25 minutes until fish flakes easily with a fork.
