Dairy-Free Pumpkin Bread

Recipe Ingredients:
  • cups unbleached all purpose flour
  • 1 cup sugar or coconut sugar
  • 1 tsp baking soda
  • ½ tsp Kosher salt
  • 1 tsp pumpkin pie spice
  • ½ cup  Pacific Foods Organic Oat Reduced Sugar Plant-Based Beverage
  • 2 eggs
  • 1 cup organic pumpkin puree
  • 1 tsp pumpkin seeds
  • Preheat the oven to 350 degrees Fahrenheit and grease one 9X5 inch loaf pan.
  • In a large bowl add flour, sugar, baking soda, salt, and pumpkin pie spice. Whisk to combine.
  • Add oil, Oat Beverage, eggs and pumpkin puree. Whisk well to combine. Pour batter into loaf pan and sprinkle pumpkin seeds over the loaf.
  • Bake for 60-65 minutes and let cool before serving.
