Dairy-Free Baked Cinnamon Apple French Toast

French Toast

  • 1 1 lb. loaf challah bread sliced into 3/4-inch slices
  • 5 eggs
  • 1 cup Pacific Foods Rice Original Plant-Based Beverage
  • 3 tbsp. maple syrup
  • 1 tbsp. vanilla extract
  • 1/4 tsp. sea salt
  • 1/2 tsp. cinnamon

Apple Topping

  • 4 tbsp. coconut oil
  • 4 apples peeled and thinly sliced
  • 1/4 cup coconut sugar
  • 3 tbsp. maple syrup
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg

Maple Drizzle

  • 3 tbsp. Pacific Foods Rice Original Plant-Based Beverage
  • 1 1/2 cups confectioner sugar
  • 1 tbsp. maple syrup
Instructions
  • Preheat oven to 350 degrees Fahrenheit.
  • Grease a 9 x 13-inch baking dish with coconut oil, set aside.
  • Whisk together Rice Plant-Based Beverage, eggs, maple syrup, vanilla extract, sea salt, and cinnamon. Dip each slice of Challah bread into mixture, then arrange in an overlapping pattern in greased baking dish. Repeat with the remainder of the bread slices.
  • Pour any remaining liquid over top of bread.
  • To a large saute pan, add coconut oil over medium-high heat. Add in apple slices, spices, brown sugar, and maple syrup. Cook until apples have softened and sugar has become a thick syrup, about 10 minutes.
  • Spoon apple and syrup mixture overtop of Challah bread slices (and mixture). If not baking immediately, cover with plastic wrap and let sit in the refrigerator overnight.
  • Cover with aluminum foil and bake for 25 minutes. Remove foil, and continue baking for another 25 minutes, or until apples have completely softened and French toast is golden.
  • Meanwhile, prepare maple drizzle. Whisk together all three ingredients until a silky glaze forms. Set aside.
  • Remove baked French toast from oven and drizzle with maple drizzle.
  • Cut into slices and enjoy!
  • Optional toppings: nut butter, caramelized bananas, berries, apple slices, coconut flakes, pecans, walnuts, cacao nibs, dried raisins or cranberries, and maple syrup.
