Ingredients

  • 1 cup sugar
  • 1/2 cup vegan butter at room temperature
  • 1 tsp. vanilla
  • 1/2 cup Pacific Foods Hazelnut Original Plant-Based Beverage
  • 2 overripe bananas mashed
  • 2 cups all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • Crumb Topping
  • 1/2 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 4 tbsp. vegan butter melted
  • 1/2 tsp. cinnamon
  • pinch salt

Instructions

  1. In a large bowl, beat together sugar, egg and vanilla until combined. Add the vegan butter and beat until smooth. Mix in the Hazelnut Plant-Based Beverage and bananas.
  2. In a separate bowl, mix together the flour, salt, baking soda, baking powder and cinnamon. Stir the dry ingredients into the wet until all the flour is incorporated. Spray a 8 ½” x 4 ½ “ loaf pan with non-stick spray and pour in the batter.
  3. Make topping by combining the powdered sugar, flour, cinnamon, salt and melted vegan butter. Crumble the mixture over the batter in the pan. Bake at 350 degree oven for 45 – 50 minutes or until a toothpick comes out clean.
