Ingredients

  • 1 carton Organic Refried Black Beans with Green Chiles
  • 1 cup brown rice
  • 2 cups Pacific Foods Organic Vegetable Broth
  • 6 baby colored bell peppers
  • 1 cup baby spinach
  • 1/4 cup chopped red onion
  • 1/2 cup cherry tomatoes,
  • 1 cup salsa optional
  • 1/2 cup cotija cheese, optional

Instructions

  1. Boil rice in vegetable broth, using cooking time per package directions.
  2. Heat beans in small pan over medium-low heat.
  3. Assemble cooked rice, refried beans, veggies and cilantro into bowl.
  4. Top with salsa and cheese if desired.
