Dairy-Free Mint Chocolate Pudding

Ingredients

  • 2 large ripe avocado
  • 1/2 cup pure unsweetened cocoa powder
  • 1 cup coconut sugar
  • 1/4 cup Pacific Foods™ Organic Coconut Unsweetened Plant-Based Beverage
  • 1/8 teaspoon peppermint extract (about 10 to 12 drops)

Instructions

  • Step 1

    Remove skin and pit of avocados and discard. Add avocado to a food processor. Add remainder of ingredients to food processor. Pulse on high for 60 seconds, or until ingredients are smooth, creamy, and combined. 

  • Step 2

    Divide pudding into small jars and refrigerate for 20 or more minutes before serving. Garnish with fresh mint, if desired.
