Mussels in Spicy Tomato Broth

This simple mussels dish is packed with delicious Italian flavors and couldn't be easier to make! Pacific Foods™️ low sodium chicken broth is perfect for this recipe because it’s organic and adds incredible flavor. Don’t forget the bread to sop up every last drop of the delicious broth!

Ingredients

  • 3 tablespoons olive oil
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 tablespoon chopped drained jarred whole Calabrian chili peppers
  • 1 can (14.5 ounces) crushed tomatoes or tomato puree
  • 1/2 cup dry white wine
  • 2 cups Pacific Foods™ Organic Low Sodium Free Range Chicken Broth
  • 2 pounds mussels, scrubbed and debearded (discard any with broken shells)
  • 1 cup fresh Italian parsley, roughly chopped

Instructions

  • Step 1

    Heat the oil in a large pot over medium heat.  Add the shallot and cook for 3 minutes or until softened.  Add the garlic and cook and stir for 1 minute.  Stir in the chili peppers and tomatoes and season to taste with salt.  Cook for 5 minutes.

  • Step 2

    Stir in the wine and broth.  Reduce the heat to medium-low.  Cook for 10 minutes or until the mixture is slightly reduced but still brothy.

  • Step 3

    Stir in the mussels.  Cover and cook for 5 minutes or until the mussel shells open (discard any that didn't open).  Season the broth mixture with salt and pepper to taste.  Stir in the parsley.  Serve the mussels and broth mixture with crusty bread for dipping, if desired.  Enjoy!
