Preheat waffle iron and spray with nonstick cooking spray. In a small bowl whisk together olive oil, Pacific Foods Organic Low Sodium Chicken Broth, and eggs. In a separate bowl whisk together flour, baking powder, baking soda, and sea salt. Add mashed potatoes and cheddar cheese to egg and broth mixture. Stir well to combine. Add in dry mixture and stir well to combine. Stir in fresh herbs. Scoop ?- ? cup batter into waffle iron. Close lid and let waffle bake until golden brown. Remove waffle from iron and repeat with remainder of batter. Serve waffles with cranberry sauce. Enjoy! Note: if you don't have a waffle iron, scoop batter onto a hot griddle, cook five minutes, flip, cook an additional 5 minutes and enjoy potato pancakes instead!
