Easy Waffle Grilled Cheese with Creamy Tomato Soup

Ingredients

  • 2 cups (waffle) pancake mix
  • 1 egg(or flax egg to make vegan)
  • 2 tablespoons avocado oil
  • 1 teaspoon dried oregano leaves
  • 1 cup Pacific Foods™ Hemp Original Unsweetened Plant-Based Beverage
  • 8 slices sharp Cheddar cheese (about 8 ounces) (use dairy-free to make vegan)
  • 4 cups Pacific Foods™ Organic Creamy Tomato Soup, heated

Instructions

  • Step 1

    Preheat waffle iron and spray with nonstick cooking spray. Prepare waffle batter: mix together waffle mix, egg, avocado oil, oregano and hemp milk.

    For each waffle grilled cheese, pour 1/2 cup batter onto hot waffle iron. Cook until waffle is golden brown. Carefully open waffle iron lid and arrange 2 slices cheese on one half of cooked waffle (you may need to tear the slices into smaller pieces to fit on one half). Fold the other half of the waffle over the cheese and press waffle iron lid closed for 1 to 2 minutes, or until cheese is melted. Serve waffle grilled cheese with the soup- no spoon necessary! Enjoy!
