Dairy-Free Sweet Spinach Pancakes

Ingredients

  • 1 cup packed fresh baby spinach
  • 1 cup Pacific Foods™ Organic Oat Original Plant-Based Beverage
  • 1 egg
  • 1 tablespoon coconut oil, melted (plus more for cooking)
  • 1 cup unbleached white all-purpose flour
  • 2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

Instructions

  • Step 1

    In a blender, combine spinach, oat milk, egg, and coconut oil. Blend until smooth.

  • Step 2

    In a large bowl, whisk together flour, coconut sugar, baking powder, baking soda, and sea salt. 

  • Step 3

    Whisk the wet ingredients into the dry ingredients until just combined. Heat a large griddle or skillet over medium heat and grease with additional coconut oil. Carefully pour 2 to 3 tablespoons of the pancake batter onto the griddle. Cook for 2 minutes, or until small bubbles form on pancakes, and flip. Cook an additional 2 minutes. Repeat with remainder of pancake batter. 

  • Step 4

    Keep pancakes n a warm oven until ready to serve. Serve pancakes with berries, yogurt, and maple syrup, if desired. Enjoy!
