Coconut Citrus Poached Salmon

Ingredients

  • 2 orange
  • 2 lime
  • 1 cup Pacific Foods™ Organic Coconut Unsweetened Plant-Based Beverage
  • 1/2 cup Pacific Foods™ Organic Low Sodium Vegetable Broth
  • 3 tablespoons coconut aminos
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon black pepper
  • 4 wild-caught salmon fillet
  • 1/2 cup cilantro, finely chopped
  • 1 serrano chili pepper, finely diced

Instructions

  • Step 1

    Slice one lime and one orange into thin slices. Set aside. Juice and zest the other orange and lime. 

  • Step 2

    Add the lime and orange juice and zest to a bowl along with coconut milk, broth, coconut aminos, fish sauce, garlic cloves, maple syrup, 1/4 cup cilantro and black pepper. Whisk to combine. 

  • Step 3

    Pour the coconut milk mixture into a deep skillet and add the lime and orange slices. Bring mixture to a boil, reduce heat to a simmer, and simmer for 7 minutes. 

  • Step 4

    Carefully add salmon (skin side down) into coconut broth. Simmer salmon gently for 10 to 15 minutes, or until salmon is opaque and cooked through. Remove salmon from heat, garnish with remaining cilantro and the serrano pepper. Serve and enjoy!
