Coconut Citrus Poached Salmon

  • 2 orange
  • 2 lime
  • 1 cup Pacific Foods™ Organic Coconut Unsweetened Plant-Based Beverage
  • 1/2 cup Pacific Foods™ Organic Low Sodium Vegetable Broth
  • 3 tablespoons coconut aminos
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon black pepper
  • 4 wild-caught salmon fillet
  • 1/2 cup cilantro, finely chopped
  • 1 serrano chili pepper, finely diced


  • Slice one orange and one lime into thin slices. Set aside. Juice and zest the other orange and lime. Add to a bowl along with Coconut Plant Based Beverage, Vegetable Broth, coconut aminos, fish sauce, garlic cloves, maple syrup, ? cup cilantro and black pepper. Whisk to combine. Pour into a deep skillet and add slices of orange and lime. Bring mixture to a boil, reduce heat to a simmer, and simmer for 7 minutes. Carefully add salmon (skin side down) into coconut broth. Simmer salmon gently for 10-15 minutes, or until salmon is opaque and cooked through. Remove salmon from heat, garnish with additional cilantro and serrano pepper. Serve and enjoy!
