Garrison Keillor once said, “July is the only time of year when country people lock our cars in the church parking lot, so people won't put squash on the front seat.” And, it’s so true! It’s that time of the year when our gardens gift us with more zucchini goodness than we sauté, slice or sandwich. So, it’s only fitting that today is National Zucchini Day.
Thankfully, for those of you who aren’t growing a bounty of your own, it’s also National Farmer’s Market week. That makes it doubly fitting to stock up on zucchini and support your local farmer’s market this weekend.
Our community store is almost like a mini farmer’s market. We sell local produces from our founder’s farms at a low price, making it easy and affordable for Pacific employees to access fresh, organic foods. The zucchini plants were overwhelming at the farms, so we had to start giving them away! Even then, we couldn’t get rid of them fast enough.
So, it’s time to celebrate. Break out the cutting boards. Oil up the frying pans. And have another slice of zucchini bread in honor of National Zucchini Day. Now… does anyone know some more great recipes to use up all these zucchini?
