Red, White and Blue Dessert Recipes Pacific Foods

Summer is here! The 4th of July is right around the corner, and what better way to celebrate than with some patriotic recipes? We’re bringing in the holiday with some of our favorite Red, White and Blue Desserts.


They’re sure to please. In fact, when we tested these recipes in the office, we hardly had enough for photos because they were gobbled up so quickly. Better yet, these recipes are not only extra tasty but special-diet friendly – perfect for hosting parties!


In Oregon, fresh berries are everywhere this time of year. So, they make up our blue and red in these recipes. These patriotic recipes are best when made the night before.


Overnight Chia Seed Pudding



  1. Combine the first three ingredients in a bowl, cover and refrigerate overnight.

  2. Layer chia seed pudding and fresh berries in small glass jars and serve immediately.


Recipe notes: Chia seed pudding can be made up to 3 days in advance. To shake up the flavor on this one, substitute a nut beverage (like hazelnut or almond) or by using other fresh berries, like raspberries, marionberries or blackberries.


Patriotic Berry Popsicles


  • 2 cups whole strawberries, frozen (about two or three handfuls)
  • ½ cup whole strawberries, fresh (about four strawberries)
  • 1 ½ cups whole blueberries, frozen
  • 1 ½ cups whole blueberries, fresh
  • Hemp Vanilla Non-Dairy Beverage
  • Popsicle maker (or small paper/plastic cups) & popsicle sticks


  1. Puree frozen and fresh strawberries until smooth in a blender or food processor. Add hemp vanilla non-dairy beverage to smooth as necessary. (NOTE: adding too much will turn the strawberry puree very pink.) Puree should be very thick.

  2. Fill each Popsicle maker 1/3 of the way full with strawberry puree.

  3. Slowly add hemp vanilla non-dairy beverage another 1/3 of your maker (2/3 full at this point).

  4. Freeze popsicles for 30 minutes to an hour. Then, insert popsicles sticks once partially frozen. Remove frozen blueberries from freezer, place into refrigerator to partially thaw.

  5. After 1-2 hours, prepare blueberry puree: add fresh and frozen blueberries in a blender or food processor and puree until smooth. Puree should be very thick.

  6. Add this blueberry puree as the last layer, on top the white hemp layer. Freeze for an additional 2 hours (minimum). When frozen and ready to serve, remove from mold and serve immediately!


Recipe notes: Use blackberries in place of blueberries or use a mixture of the two. You can use all frozen or fresh fruit instead of a combination, depending on what you have. If using all fresh, you will have to freeze after each addition (do not add hemp right away) and you probably will not have to add hemp to the strawberry mixture. If using all frozen fruit, thaw partially (as recommended with blueberries above) or add more hemp with the berry mixture.
