Recipes for a Feast Pacific Foods

Recipes for Portland Feast, that is. Have we mentioned how excited we are for this extravaganza? We feel so lucky to be at Feast with all these great chefs, artisans and like-minded brands! So, we wanted to share the fun and food with anyone who wasn’t able to make it this year.

 

Sandwich Pairings: First up, the fresh Roasted Red Pepper Gazpacho we’ve raved about so many times. How could we not? It’s the perfect side to pair with all the amazing sandwich creations at the Sandwich Invitational tonight! We’re using all fresh ingredients, straight from our founder’s farms. Topped with a little homemade cilantro crème fraiche (all local again), mmm, mmm, mmm!

 

Dessert: Tomorrow’s highlight is our homemade Chocolate Hazelnut Pudding (recipe below). It’s totally dairy free and gluten free, so it’s perfect when entertaining family and friends with special diets! Topped off with our own dairy-free caramel sauce and a little fresh ground salt, it’s irresistible. We dare you to try this one at home. You will not be sorry!

 

Baked Goods: We’re serving up some of Cupcake War Winner, Kyra’s Bake Shop’s gluten-free, dairy-free desserts. If you haven’t had them, you’re missing out. Her Double Chocolate Cucakes will be will made with our rice non-dairy beverages  and, she’s using our Hemp Non-dairy Beverages in her Chai Spice Brownies. Her recipes are a well-kept secret, but any time you get a chance, definitely try them out. Well worth it!

 

Blended Beverages: We’ll also be blending up four smoothie recipes this weekend, and we have something for everyone. From a Velvet Elvis (Elvis’ favorite sandwich in liquid form) to a detoxifying Citrus Aloe Smoothie, you’ve gotta try them! We also have Tracy Merriman’s Holiday Hangover Helper Smoothie, just enough kick to boot that headache away, for anyone moving a little slow the next day. And last, but definitely not least, we have our Mocha-Nut smoothie featuring coffee provided by our good friends at Stumptown with our Chocolate Hazelnut Beverage (So Oregon!). See the recipes below!

 

Chocolate Hazelnut Pudding:

¼ cup Dutch Cocoa Powder

1/3 cup sugar

2 1/12 Tablespoons cornstarch

2 tsp Stumptown Cold Brew Coffee

¼ tsp Sea Salt

2 cups Pacific Hazelnut Chocolate Beverage

1/3 Cup Hazelnut Butter

1 tsp Vanilla extract

  1. In a medium sauce pan, whisk together Dutch Cocoa, sugar, corn starch and salt. Incorporate completely breaking up lumps as much as possible. Over medium heat, whisk in Hazelnut chocolate beverage, hazelnut butter, stumptown cold brew coffee and vanilla extract.
  2. Set up an ice bath with a glass or metal bowl for cooling after cooking.
  3. Continue gentle whisking until the mixture just begins to boil, about four minutes to heat. Once boiling, a few bubbles, cook for 2 minutes whisking gently.
  4. Remove from the heat. Using your ice bath, pour warm pudding into chilled bowl and whisk gently to allow the mixture to cool, about 10 minutes.
  5. Transfer cooled pudding to cups, cover with shrink wrap and allow it to cool for at least one hour.

Mocha-Nut

Fill up and caffeinate with this hazelnut mocha inspired beverage. We adapted this smoothie from a Superfood Smoothie recipe book.

  • 1/6 cup raw cashews
  • 1/8 cup Medjool dates, pitted (about 1-2 large fruits)
  • 1 tablespoon cacao nibs
  • 1/2 tablespoon cacao powder
  • 1/4 cup cold-brewed Stumptown Coffee
  • 1/2 cup Pacific Chocolate Hazelnut beverage
  • 1 1/2 cups ice
  • Sweetener (Optional)

Blend all ingredients together until frothy and smooth. Enjoy!

Citrus Aloe

This detoxifying, cleansing smoothie is just what you need to cleanse your palette for another day of tasty food. We adapted this smoothie from a Superfood Smoothie recipe book.

  • ½ cup Unsweetened Vanilla Hemp beverage
  • ½ cup frozen pineapple
  • 1 cup orange juice
  • 1/8 cup aloe vera juice
  • 1 tablespoon mashed avocado
  • 1/8 cup chopped parsley
  • ½ teaspoon fresh lime juice
  • ½ cup ice

Add ingredients into blender. Puree until smooth.

Velvet Elvis

An original Pacific recipe that tastes just like Elvis’ favorite meal. Fill up on a serving of whole grains with a little peanut and banana to start off your day right!

Add ingredients and blend until well mixed.
