Greek Salad Chicken Flatbread Lily Pad Cottage- Kelly Rinzema

My family loves hummus, so when I got the opportunity to try Pacific's new organic hummus I jumped at the chance.  For this recipe I tried Pacific's Organic Roasted Garlic Hummus and it became an instant favorite in our hummus loving house. It comes in Classic and Roasted Red Pepper as well (equally delicious!). It has a really great consistency, which makes it taste homemade.  In fact, I like this better than my own homemade hummus.

I love that it's all organic made from real ingredients.  It also comes in these shelf-stable BPA-free cartons, so you can feel really great about serving it to your family.

I love to use hummus as a spread on sandwiches, it's a great healthy alternative to mayo and it pairs perfectly with the Greek flavors in this Greek Salad Chicken Flatbread. This recipe is such a light and easy weeknight meal in the summer!

Greek Salad Chicken Flatbread



  • 2-3 boneless skinless chicken breasts
  • juice of 1 lemon
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 cloves of garlic, finely minced
  • 2 teaspoon dried oregano
  • 1 tablespoon honey
  • Pacific Foods Organic Roasted Garlic Hummus
  • 2-4 flatbreads
  • 1 head of romaine lettuce, chopped
  • 1/2 cup chopped cherry tomatoes
  • 1/2 cup chopped kalamata olives
  • 1/2 red onion thinly sliced
  • 1/2 cup feta crumbles


  1. Mix marinade/salad dressing by combining the lemon juice, olive oil, red wine vinegar, garlic, honey, oregano, salt and pepper to taste.
  2. Pour half into a bowl and add the chicken. Let marinate for at least 1 hour.
  3. Set aside the remaining dressing to use on the salad.
  4. Grill marinated chicken for 4-6 minutes per side on medium heat until cooked thoroughly. Set aside to rest.
  5. Grill flatbread until nicely toasted.
  6. Toss lettuce, tomatoes, olives, onion, and feta in a bowl with the remaining salad dressing.
  7. Spread Pacific hummus spread on the flatbread.
  8. Top with tossed salad mixture.
  9. Slice the chicken breast and add on top of the flatbread.
  10. Top with more feta and salt and pepper.
