Summer’s here at last. Time to hit pause and savor the warm weather and loose schedule. If you’re like us, easy is the way to go with summer dishes. These simple menu ideas will help you pull meals together quickly, no matter how unstructured your day has been.
Bring 2 cups of quinoa and 4 cups Pacific Organic Chicken Broth to a boil. Reduce temperature and simmer for 15 minutes. Toss in 1/2 cup of olive oil and the juice of one lemon with minced garlic and diced veggies. (We used green onion, arugula, tomatoes and peppers.) Serve room temperature or cold for a surefire crowd pleaser. (Substitute Pacific Vegetable Broth for vegan diets.)
Stuffed Grilled Peppers
Mix Pacific Corn and Poblano Pepper Chowder with precooked brown rice and heat. Slice seeded green or red peppers in half, brush with olive oil and grill. Stuff grilled peppers with warm soup and rice mixture. Sprinkle with cojita or goat cheese and serve.
Black Bean Enchiladas
Fill flour or corn tortillas with Pacific Refried Black Beans With Green Chiles and shredded cheese. Roll up and place together in a lasagna pan. Cover with Pacific Tortilla Soup Starter and more shredded cheese. Bake at 350 degrees for 20 minutes until cheese is melted and sauce is bubbly.
