Making stuffed peppers can be time consuming. With this simple recipe, I can make it quickly while still getting rave reviews from my friends and family. I also can adapt this recipe to my health concious daughter who does not eat meat by simply exchanging the ground beef for veggie crumbles and switching the white rice to brown. Since it’s so much easier to make than stuffed peppers, we sometimes make both versions the same day.
In a large saucepan, heat olive oil over medium high heat until hot. Add onions, garlic and peppers. Saute for 2-3 minutes. Add ground beef and cook until beef is browned and onions, peppers and garlic is soft. Add the reamining ingredients and season with salt and pepper to taste.Simmer for 30 minutes. Serve with a dollop of sour cream and some red or green pepper strips for a festive garnish.
