This is a "tweaked" version of the popular "Taco Soup" that you see everywhere, however, I always change ingredients and try to make it better each time I make it. This is my favorite version using all organic ingredients and chicken instead of beef! I do hope you enjoy it!!!
1/2 organic medium red onion (finely diced)
1-1/4 lbs organic ground chicken breast
2 Tbsp. organic olive oil
2 Tbsp. organic cumin
2 Tbsp. organic chili powder
1/2 tsp. organic garlic powder
1/2 tsp. organic onion powder
1/2 tsp. organic cayenne pepper
1/2 tsp. organic paprika
Sea Salt (to taste)
2 - 14.5 oz cans organic Fire Roasted tomatoes w/ chipotle peppers
1 - 15 oz can organic corn
1 - 15 oz can organic black beans
1 - 15 oz can organic pinto beans
1 - 16 oz jar organic fire roasted salsa
1 - 32 oz carton Pacific Foods Organic Free Range Low Sodium Chicken Broth
Sautée the onion in olive oil until slightly tender. Add ground chicken & cook until done. Add all of the spices & let simmer for a few minutes to absorbe the flavors. Add tomatoes, corn, beans, salsa & half of the chicken broth. Stir & cook over high heat until it begins to bubble. Turn the heat down to low and continue to simmer for at least 2 hours and add the remaining chicken broth as you go until you get it to the consistency you desire.
I like to serve it with a dollop of organic sour cream, Organic Mexican cheese & fresh sliced jalapeños!
NOTE: I made my own homemade taco seasoning, however, you can always substitute a package (or two) of your favorite taco seasoning for all of the spices listed (except salt).
