Broccoli Casserole

A favorite vegetable and cheese combination from childhood is renovated for today's modern family.  Perfect for a cozy holiday meal or a quick and easy side dish for dinner any day of the week.  (Serves 8-10)

Ingredients

  • 10-12 oz. of fresh broccoli
  • 2 (12 oz.) cartons of Pacific Natural Foods Cream of Mushroom Condensed Soup
  • 2 cups bowtie pasta
  • 3/4 cup chopped shallots
  • 1/4 cup butter (or margarine)
  • 16 oz. of cheese sauce (made with cheddar cheese, cream, and flour)
  • salt to taste
  • ground black pepper to taste

 

Preparation

  1. Cook bowtie pasta as directed on box.
  2. Sauté shallots in butter until done.
  3. Cook broccoli until tender in microwave or steamer.
  4. Mix together broccoli, soup, pasta, shallots, butter or margarine, and cheese sauce. Season with salt and pepper to taste. Place in a 9 by 13 inch oven proof dish.
  5. Bake for 30 to 40 minutes at 350° F (175 degrees C).
