2 LBS CHICKEN PARTS-WHITE OR DARK, WASHED
1 LARGE PARSNIP, PEALED AND SLICED
3 CARROTS PEALED AND SLICED
1 LARGE ONION, PEALED, SLICED
1 BUNCH FRESH PARSLEY WASHED & CHOPPED
3 STALKS CELERY, WASHED, SLICED
PUT ALL OF THE ABOVE INTO A LARGE POT AND BRING TO GENTLY BOIL, SKIM OFF ANY FOAM THAT APPEARS, GENTLY SIMMER, COVERED 1 to 1 1/2 HRS. BEST TO REFRIGERATE OVERNIGHT AND SKIM OFF ALL FAT FROM CHICKEN BEFORE REHEATING.
