Zucchini Pancakes your kids will love. Makes approximately 16 - 3" pancakes. These pancakes also freeze well. Just remove from freezer and warm for a quick hot healthy breakfast.

1/3 cup milk (Pacific Organic Vanilla Oat Milk)
2 cups zucchini (washed and cut into 1" pieces)
3 eggs
1/4 tsp. salt (opt.)
2 Tbsp. (heaping) honey
1 tsp. cinnamon
1/4 tsp. pumpkin spice
1 cup whole wheat flour
1/2 cup spelt flour (or whole wheat flour)
2 tsp. baking powder
Place milk, zucchini, eggs, salt, honey, and spices into a blender. Run on medium speed until mixed (approx. 10 sec.) Add in flour and baking powder about 1/3 at a time and run until mixed (about 10 -20 sec.) Cook on a warm griddle and serve with your favorite syrup or fruit.
